La Fin Du Monde (The End of The World) is my second tasting from the Quebec brewery Unibroue. The first was their 15th Anniversary Ale, which I enjoyed back in August.

LFDM poured a murky dark yellow, shading a bit towards brown. It’s a highly carbonated brew; I needed a slow and careful pour just to get this one out of the bottle. All of that carbonation resulted in a large bubbly head forming. Unfortunately the head didn’t have that much staying power and faded away rather quickly. As I rose the glass up to sip, big smells of Belgian yeast suggesting bright fruits with a hints of citrus greeted me.

The flavor was delicious with slightly tart fruits (grape with a bit of tangerine) and a touch of candy sweetness on the palette. There’s a light and slightly slick mouthfeel to this beer. The carbonation remained pretty intense throughout my drink, I felt it even got in the way a bit of my tasting. As the beer starts to finish, I get the slightest burn from the alcohol. The finish is fast and clean with a bit of sugar on the tongue.

Six Month Cellar Tasting: May 12th, 2008

There’s definitely been a few changes over the past six months.

The most notable change was a slight reduction in the carbonation. It was still a very zippy brew, but I didn’t feel the carbonation was got in the way this time around. It also seemed a bit brighter in color then I had noted before, but I suspect that might be taster error rather then an actual phenomena!

The taste was very fruity with a sugar-cookie sweetness (I would consider this a semi-sweet brew as the sweetness wasn’t overwhelming). There was lots of cherry, peach/tangerine, pear, and grape notes - just a rich fruit flavor. Lingering fruit and candy sugar made for a very pleasent finish.

Cellar Outlook: Bottle conditioning and 9%abv should allow this beer to hold up pretty well. I’m expecting the fruits to mellow out a bit and a more creamy mouthfeel to develop. The Unibroue website says LFDM has a shelf-life of three years, and I have no reason to doubt them.

Six Month Cellar Outlook - Going strong, and will probably keep going for a couple more years to come. Like I said above, the fruit will almost certainly start to mellow out soon.

    I can definitely sympathize with you on the having to drive to a whole different state thing. I’m planning on trips to Mass. and Penn. just so I can get a few beers not available here.
