Great Cellaring Article on RateBeer.com

I came across a great article the other day on RateBeer.com that I just had to share with you all. It’s by a fellow named Joris P Pattyn and titled So You’ve Got a Cellar…Now What? - A Tutorial On The Aging of Beer. It is, without a doubt, the most detailed (and well written) article on beer cellaring I’ve found on the web.

Joris touches on a number of topics that I’ve discussed on this site, including the effects of ethanol and bottle conditioning on aging beers. He also makes some great observations on the preservative ability of acids, the roles of alcohols other then ethanol in your beer, and some insights on the great debate between storing your corked bottles standing up or laying down.

Did you know there is an insect in Belgium (and possibly other places) that LOVES to lay it’s eggs in the corks of beer bottles? I didn’t, and I almost wish Joris didn’t share that nuggest of info.
